Tasty Bite Eggplant 004_2As a new vegetarian, I am trying all kinds of ethnic foods. I love Indian food, but it is often too spicy for me. So I have started adding things to balance the spices. Eggplant is one of my favorite foods. So the Punjab Eggplant from Tasty Bite really caught my attention.

The seasoning was great–but too intense for me. So I sauteed two sliced red onions in olive oil and then added a 15 oz. can of chickpeas to the pan After five minutes, I opened up the foil package of  Punjab Eggplant-braised eggplant with aromatic Indian spices.  Soon I had a great, healthy dinner at a reasonable cost. 

Could I embellish it? I added a chopped bananas and chopped cashews with sea salt. Even better. This is my new hamburger helper. Next time I will add mushrooms and black beans. I think the caramelized onions are important to this dish
