IMG_20160624_185852Before I make it down the plush red carpet, a photographer snaps my photo and a smiling server offers me a sparkly, fluted glass of light golden bubbles. I step through the glass door and find myself in The Land of Oz! Brilliant hues of green, yellow and blue on a semi-circle yellow brick road with iridescent white globes descending from the sky.

Alright, not really a yellow brick road but rather a gorgeous glowing yellow bar and not really the sky but for a moment, my mind saw the yellow brick road and a blue sky. And of course, a tree ~ a Wine Bottle Tree.IMG_20160624_190715 Absolutely fascinating!20160718_184034 Where was I? Hypnotized and enraptured, I walk into this ever flowing magical room.

Plano has a great, new steak house in town! Amid hundreds of steak houses in the DFW area, Fleming’s is clearly a place of distinction.

Fleming’s 100® is known for its award-winning list of 100 wines by the glass. The wine list features top-rated vineyards from all over the world: champagne, white, red, pink, golden and delicious dessert wines. Tonight’s pairing will feature Schramsberg, Blanc de Blancs North Coast 2012; Frank Family, Chardonnay Napa Valley Carneros 2013; Forty-Six Diamonds with Chapter 24, Pinot Noir Willamette Valley and Bella Union, Cabernet Sauvignon, Napa Valley 2013.20160629_195012 Personally, I have been on a quest for years searching for a smooth, buttery, subtle and slightly fruited Chardonnay and thanks to Fleming’s 100 Wines, “Mission accomplished”

VZM.IMG_20160718_193756How exciting to spot a draped table decorated with half-shelled oysters on ice and a side of Thai basil-chile Mignonette and horseradish cocktail sauce. Alaskan King Crab Legs and claws,20160626_171408 Australian Lobster Tails and colossal shrimp are all underneath a huge Flemings ice sculpture. The seafood is tender, flawless and extraordinary in every morsel.

My dinner companion, the charming TravelLady, Miss Madelyn Miller and I are sitting at a lovely table. Before me is an offering of the Wedge Salad with an enormous piece of slab-cut bacon, blistered tomatoes, crumbled Gorgonzola, pickled red onion and toasted pepitas. I’ve enjoyed many wedge salads but this one is unmatched and truly the best ever. The slab-bacon is crispy on the outside and tender on the inside. It is exemplary. VZM.IMG_20160718_193208Madelyn selects the Salted Roasted Beet Salad made with mixed field greens, smoked chile pecans, crumbled chevre and a cabernet-shallot vinaigrette. My sample of her gorgeous,20160717_211347 colorful green and purple salad tastes even more scrumptious than it looks.

My taste buds are still savoring the delicious salads when a bone-in Filet Mignon is set before me. My eyes widen at the size of my steak and suddenly the aroma hits my senses.  I can hardly wait to take a bite but first, I cut the middle to see if my steak is cooked to “medium”.VZM.IMG_20160718_192804

Yes, picturesque pink center. Tender to cut, I close my eyes to block out the other senses and focus on the aroma and flavor. To say, “It melted in my mouth” would be cliché, but it is so true. Much to my delight, Madelyn shares a few bites of her Black Miso Glazed Chilean Sea Bass with sesame-orange spinach, arugula and pickled red onion. This Chilean Sea Bass is golden. The flaky and tender Chilean Bass and its perfectly sweetened Black Miso glaze is delectable.20160629_193936

My plate is full with a bone-in filét, creamy chipotle macaroni and cheese, crispy Brussel sprouts, sautéed mushrooms and delicious Fleming’s potatoes. Yes, I have a Happy Plate. A very happy plate.

20160717_212014Last but never, ever least, the desserts: creamy cheesecake, a luscious crust blackberry cobbler, perfectly textured créme bruleé and aVZM.IMG_20160718_191753 delectable butterscotch pie. Subtle sweetness; not overly rich and wonderfully balanced.

Yes, every bite took me somewhere over the rainbow!

VZM.IMG_20160718_194543I close my eyes and smile as I hear live, soft jazz music playing, the sound of joyful people laughing and talking while drinking the finest wines and eating the most marvelous foods.

I’ve experienced restaurants where the food was great but the service was lacking; or listened to live deafening brass instruments or speakers blaring loud rock music while trying to enjoy the food and the ambiance.20160717_214417

However, at Fleming’s you are welcomed as a very important person and their goal is to treat you to an experience of divine elegance and excellence. The look, energy, vibe, sound, aromas and drinks ~ This is the complete package in its entirety.

I marvel at the attention to each detail in this alluring steakhouse, from the beauty of this restaurant to the soothing tones of the talented live band.
