Lambert will sign her cookbook from 10:30–11:30 am. Books are sold in The Modern Shop for $35. The three-course lunch ($30; $45 if paired with wine) begins at 11:30 am, prepared directly from the cookbook by Café Modern’s executive chef, Dena Peterson. She recalls, “When I returned home after living in Italy, the thing I missed most was fresh mozzarella, and no one even knew what it was. So I decided to build a cheese factory and make mozzarella in Dallas!” Since its founding, The Mozzarella Company has progressed from making a very small amount of fresh mozzarella to producing a long list of specialty gourmet cheeses. Today Lambert is known as one of the great American cheesemakers, with more than seventy-five awards to her credit. The tiny factory, located in the shadows of downtown Dallas, sells their award-winning cheeses throughout the United States to restaurants, hotels, and gourmet shops, as well as to individuals. In recent years there has been a renaissance of high-quality cheesemaking across the United States, and pioneer Paula Lambert is partly responsible. Finally, she is sharing her passion and vast knowledge of cheese in her debut book, THE CHEESE LOVER’S COOKBOOK AND GUIDE (Simon & Schuster; November 18, 2000; ISBN 0-684-86318-9; 384 pages, 16 full-color photo illustrations; $35.00).
Combining artisanal cheesemaking skills with a dash of Southern charm, Paula Lambert has produced and created incomparable cheese, from classic fresh Mozzarella to the Tex-Mex flavored Ancho Chile Goat Milk Caciotta. Paula’s recipes also reflect her Southern, Italian, Southwestern, and Mexican influences. Some dishes are recognizable as classic recipes, changed slightly to modernize them; others are Paula’s own mouth-watering, inspired creations.
